One Minute Cinnamon Muffin -Two Ways

Are you looking for a blood sugar friendly snack or to fill the cinnamon craving? This will get you both. If you want a more mild flavor of cinnamon then go with option 1: One Minute Cinnamon Muffin. If you really love cinnamon and want to keep it lower in carbohydrates, then go with option 2: Super Cinnamon One Minute Muffin.
Oats are gentle on your blood sugar, but the protein of the egg white also helps stabilize your body’s response to carbohydrates. Cinnamon also is supposed to help support a healthy blood sugar response. So whether you are making this for breakfast or an afternoon snack, this muffin will satisfy, and keep you sane with a healthy blood sugar response. Low blood sugar can cause one to feel shaky, cranky, or like it is hard to concentrate. Low blood sugar can happen for a few reasons. One, you didn’t eat recently or two, what you ate last was too high in carbs, and was not balanced with protein, causing a spike and then a low.
If you are following Trim Healthy Mama eating style this is a E -Energizing Carbs snack. If you are making this a meal, such as breakfast, I would add an egg white and veggie scramble to make it a meal. Or any desired low-fat protein source, to keep it in E guidelines. Yogurt or Low-fat Cottage Cheese would be other great proteins if you can handle dairy. You could also add a 1/2 serving of fruit such as 1/2 an orange, 1/2 banana, or a small handful of frozen mango cubes.
If you are not following Trim Healthy Mama, or you aren’t worried about making it a weight-loss friendly meal, I suggest that you make it with a whole egg. Eating it for breakfast? Add some more protein such as eggs, or a protein shake. Make it a filling meal by adding some sautéed veggies as side, and a small serving of fruit.
Below I have listed two ways to make a One Minute Cinnamon Muffin.
Option 1:
One Minute Cinnamon Muffin.
Ingredients:
1 tsp coconut oil (melt this first in your glass bowl)
1 tbsp water
1 egg white
4 Tbsp Oat flour (4-5 Tbsp rolled oats ground up)
1/2tsp Cinnamon
1/2 tsp Baking Powder
1Tbsp Erythritol or desired sweetener
1/8 tsp NOW Stevia extract powder (taste and adjust for sweetness)
1/8 tsp mineral salt
Grind the rolled oats in a blender cup or use pre-ground oat flour. Melt your Coconut oil in the small glass dish, or mug, that you plan to cook the muffin in. Add rest of ingredients to the melted coconut oil, and mix all ingredients with a fork. Microwave 45seconds or until done. Flip onto a plate and top with sweetened greek yogurt, and a sprinkle of cinnamon.
I recommend enjoying with a cup of organic black coffee. 😉
Option 2:
Try this one for a rich cinnamon experience, and lower carbs. I tend to love the rich cinnamon, almost bran like flavor. If you are a wholesome flavors person, or just really love cinnamon, then I recommend you give this second option a try.
Super Cinnamon One Minute Muffin (pictured in photo)
ingredients:
1 tsp melted coconut oil (melt this first in your glass bowl)
2 tbsp warm water
1 egg white
1 tbsp cinnamon
3 tbsp ground oats (3-4 Tbsp rolled oats ground up)
1/2 tsp baking powder
1 tbsp erythritol
1/8 tsp NOW Stevia extract powder
1/8 himalayan salt
Grind the rolled oats in a blender cup or use pre-ground oat flour. Melt coconut oil in 2 cup glass microwave dish or mug, add warm water, mix. Add rest of ingredients and mix until smooth. Clean side of dish with a spatula. Microwave for 70 seconds or until done. Flip onto a plate and top with sweetened greek yogurt, and a sprinkle of cinnamon. Enjoy!
